Having a scrummage in my freezer the other day and found a bag of pineapple I’d bought a few months ago intending to make smoothies, (that I never got round to). I didn’t want it to go out of date so decided to make a pineapple crumble with custard.

I wasn’t sure how it would turn out, I’ve never made crumble with pineapple before, but it was really delicious. Both hubby and the kids really enjoyed it.

Obviously you can use tinned or fresh pineapple for this recipe. I bet most of us have a tin of pineapple lurking in the back of the cupboard somewhere.

Ingredients (Serves 4)

4 oz butter or marge
2-3 oz castor sugar. (Granulated or whatever you have in will do)
4-6 oz either self raising or plain flour (I use whatever I have in for a crumble topping)
2-3 oz desiccated coconut
Fresh orange juice (optional)

Method

Mix all your ingredients together until they resemble fine breadcrumbs. Start with the 4 oz flour and add the rest if the mix is ‘chunky’ until you get the required texture.

Layer your pineapple at the bottom of an oven proof dish. If you’re using fresh or frozen pineapple you may need to add some orange juice so it doesn’t become dry. If from a tin, use the pineapple juice.

Cover the pineapple with the crumble ensuring it has been completely covered. Drizzle a small amount of desiccated coconut and sugar on the top.

Cook in a preheated oven at aprox 150-160 degrees until the crumble is golden brown. Serve hot with custard, cream or ice cream.

Crumble is really easy to make and it’s fun if the kids want to get involved especially as it’s so quick to make. My 12 year old granddaughter loves messing about in the kitchen and this is the type of thing she loves to make.

You can make the texture and taste a lot more interesting by adding different ingredients like desiccated coconut, porridge oats, or nuts such as hazelnuts and almonds.
