Most of us love takeaway food, especially Chinese.
But I’m always conscious of the fact it’s usually laden with sugar, lots of fats and other nasties. Plus it can be really expensive.

The kids love Chinese food especially fried rice, so we’ve come up with our own version. (My daughter and I made this one and you couldn’t tell the difference from the real thing). We used brown rice and as we don’t use a lot of fat or oil when cooking the whole dish was quite healthy.

As I was very generous with the rice, it also made a huge amount. I had to freeze a lot of it. It defrosted very well afterwards so it’s good to know you can make a batch and freeze some for a later date.

Ingredients.
Basmati/brown rice. (A handful per person) You could use ordinary rice if watching the pennies.
Cooked chicken pieces as required.
Handful Cooked Prawns
Handful Cooked Chicken
1 Onion
Handful garden peas
Handful sliced cooked pork
Handful sliced cooked beef
Chinese 5 spice to taste (teaspoon)
Salt n pepper to tasre
1/2 Teaspoon tumeric
Light soy sauce to taste
4 eggs

Tip We used ready prepared meats and prawns for this. It would have been impractical to do anything else.

Method
Cook rice as directed. Tip If using brown rice, it does take longer to cook than normal basmati rice.
Beat eggs together with some salt and pepper then place in microwave until cooked. You could also make an omlette out of them if preferred and thinly slice later.
Saute the onion until tender in a very small amount of oil. (We like frylight).
Add the seasoning, soy sauce, meats, prawns, peas etc and gently mix together with the cooked rice.
Add the very thinly sliced egg and mix once more then serve.

This is a really delicious dish and it doesn’t have to cost very much at all. We did it as a special fried rice because that’s what the kids like, but you could just do it with the rice egg and onion for plain fried rice or just add one or two meats etc.

Improvise and play with the recipe, if you like fried rice, you’ll love this especially as you won’t have either the cost or the calories that goes with buying it from your local takeaway..
