Like many people I used to buy my coleslaw from the supermarket.
Unfortunately the other week I forgot to buy it. The family love coleslaw with their salad or on a jacket potato so I had to put my thinking head on. I had a rummage in my fridge, found some basic ingredients and came up with my own very cheap version of coleslaw, (It was delicious), I now only make my own coleslaw, it’s not only very easy to make, but it’s quite healthy and it’s very low cost.
I don’t measure out ingredient’s for coleslaw, I just do it until I think there’s enough. Do it by eye and see how you get on.. Just think about how many people you’re making it for and go from there, you can always add more veg if needed. and any excess can be kept for a couple of days.
Ingredients
- Firm white cabbage
- Large carrot
- Red onion, a white onion will do, but red gives it a nice extra colour.
- Splash of olive oil
- Mayonnaise to mix. I like to use ‘proper’ mayo, but if you’re watching the calories, then low fat mayo is fine.
- Salt and pepper to mix
Method
- Finely chop the cabbage, onion and grate the carrot.
- Put it all into a large enough dish and mix it well.
- Add salt and pepper to mix. If you want to be really adventurous, you could add a pinch of garlic powder to taste.
- Add your ‘glug’ of olive oil and mix well. (Don’t overdo the oil).
- Finally, add the mayo. stir all the ingredients in really well so the veg is well coated with the mayo.Any leftovers can be stored in an airtight container in the fridge and should last a couple of days.Tip You can omit the oil if you wish, if still tastes great and you’re saving on calories. Also use low cal mayo to save on the calories.
