As usual after cooking a meal for everyone I’d made far too much. As I hate wasting food, I slung all the leftover veg into a dish  in the fridge for the next day.

I decided we’d have another lazy tea so we had Bubble and Squeak (with a difference) with bacon and egg.

Bubble and squeak is a no brainer, My take on B/S means everything vegwise goes in. I’ve got a huge non stick wok I like to use for this type of meal, to which I added a small amount of oil, (I always use olive oil, but any will do). and heated it up until smoking. Added an onion finely chopped and cooked until transparent.

Then added my leftovers to the onions, mixed thoroughly and left to heat up over a medium heat.

Served with an egg and a slice of bacon (with brown sauce), it was really yummy. Obviously you can add whatever you have handy, it doesn’t have to be bacon…

It’s also a good meal to let the kids help out with. Jessica my 12 year old granddaughter really got involved with preparing this, though she decided to make herself an omelette to go with hers which was just as delicious..
